Quick Meal Recipes

1.) Cheesy Corn Chowder


A quick and hearty soup to satisfy the youngest to the oldest member of your family.

  • Ingredients (4 servings):
    • 1 can condensed cream of potato soup
    • 1 1⁄2 cups low-fat (1%) milk
    • 2 cups whole kernel corn
    • 2 tbsp sun-dried tomatoes, cut in strips
    • 1 tsp dried onion flakes
    • 1⁄2 cup cheddar cheese, shredded
    • black pepper (optional)
  • Method:
    • In a medium saucepan, mix together the soup, milk, corn, sun-dried tomatoes, and onion flakes. Heat this over medium heat to a boil.
    • Cook on medium for 5 minutes. Stir in the cheese; simmer the chowder on low heat or until the cheese is melted. Season it with black pepper, if desired.
  •  To balance your meal, you can add: whole wheat crackers, fresh fruit of choice

2.) Easy Burritos

You could add your topping of choice, such as shredded lettuce, chopped tomatoes, your favorite salsa, or all of these.

  • Ingredients (4 servings):
    • 1 can chili or condensed chili beef soup
    • 4 (10-inch) flour tortillas
    • 1 cup taco, Mexican blend, or cheddar cheese, shredded
  • Method:
    • Spoon 1⁄4 cup of the chili or the soup down the center of each tortilla. Top it with 1⁄4 cup of the shredded cheese.
    • Fold the sides over the filling, then fold the ends to close them.
    • Place the burritos seam-side down on a microwavable plate. Microwave them for 2 minutes on high or until they’re hot.
  • To balance your meal, you can add lettuce and tomato salad, sliced mango

3.) Pita Pizza

Pita breads are typically considered a sandwich option, but they can also be used for a quick pizza meal.

  • Ingredients (4 servings):
    • 2 pitas
    • 1⁄4 cup sweet red pepper, finely chopped
    • 1⁄2 cup ripe olives, sliced and pitted
    • 1⁄2 cup mozzarella cheese, shredded
    • 1⁄2 cup pizza sauce
    • dash garlic powder
  • Method:
    • Preheat the broiler. Place the pitas on an greased baking sheet.
    • Spread pitas with the pizza sauce, then top them with the olives and red pepper.
    • Sprinkle the cheese and garlic powder all over them.
    • Set the pizzas under the broiler for 3 minutes until the cheese is melted. Cut each pita in half.

4.) Tuna Melt

A favorite quick meal that can be made in the microwave or the toaster oven in a flash.

  • Ingredients (4 servings):
    • 2 English muffins, cut in half
    • 1 (6-ounce) can tuna packed in water, drained
    • 1 tbsp light mayonnaise
    • 4 slices reduced-fat cheese of choice (cheddar, mozzarella, provolone, Swiss)
  • Method:
    • Lightly toast the English muffin.
    • In a small bowl, mix well the tuna with the mayonnaise.
    • Top the English muffin halves with the tuna. Lay a slice of cheese over the top of each half.
    • Put them in the microwave for 30 seconds or in a toaster oven for 2 minutes that to make the cheese melted and the tuna warm.
  • To balance your meal, add: carrot and celery slices

5.) Chicken Caesar Salad

Caesar salad is a favorite among children; and it is easy made even let the kids make it themselves

  • Ingredients (2 servings)
    • 2 chicken fillets, lightly breaded
    • 2 cups romaine lettuce, chopped
    • 1 tbsp Parmesan cheese, grated
    • 2 tbsp prepared low-fat Caesar salad dressing
    • 1⁄2 cup croutons, any variety
  • Method:
    • Prepare the chicken and cut into strips.
    • Combine the lettuce, Parmesan cheese, salad dressing, and croutons in plastic bag and toss them well.
    • Top the salad with strips of chicken in bowl. Serve immediately.
