Keto Dessert Recipes

Coconut Granola

Preparation time: 45 minutes

Ingredients:

  • 1 cup coconut, unsweetened and shredded
  • 1 cup almonds, and pecans, chopped
  • 2 tbsp stevia
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds
  • 2 tbsp coconut oil
  • 1 tsp ground nutmeg
  • 1/8 tsp ground allspice
  • 1/8 tsp ground nutmeg
  • 1/2 tsp cinnamon

Directions:

  1. Preheat oven at 300ºF.
  2. Prepare a bowl and mix the dry ingredients (almonds, pecans, pumpkin seeds, sunflower seeds, coconut, nutmeg, 1/2 teaspoon cinnamon, 1/8 teaspoon ground nutmeg, 1/8 teaspoon ground allspice) , and stir well.
  3. Heat a pan with coconut oil over medium heat, add stevia, and stir until combined.
  4. Pour nuts and coconut mixture into the pan and stir well.
  5. Spread the mixture on a lined baking sheet, place in the preheated oven and bake for 30 minutes.
  6. Let granola cool, then cut and serve.

 

Pumpkin Custard

Preparation time: 25 minutes

Ingredients:

  • 1 tablespoon gelatin
  • ¼ cup warm water
  • 14 ounces canned coconut milk
  • 14 ounces canned pumpkin puree
  • A pinch of salt
  • 2 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/8 tsp cloves
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 tsp nutmeg.
  • 3 tbsp erythritol
  • 2 tbsp stevia

Directions:

  1. Prepare a pot and mix the ingredients (pumpkin puree with coconut milk, a pinch of salt, vanilla extract, cinnamon, stevia, erythritol, and cinnamon, cloves, ginger, nutmeg), gently stir until well mixed, and heat for a couple of minutes.
  2. In a small bowl, mix gelatin and water. Stir well.
  3. Combine the 2 mixtures from step (1) & (2), stir well. Divide custard into ramekins and set aside to cool down.
  4. Keep in refrigerator for a few hours until harden and ready to serve.

Keto-friendly Marshmallows

Preparation time: 13 minutes

Ingredients:

  • 2 tbsp gelatin
  • 12 scoops stevia
  • ½ cup cold water
  • ½ cup hot water
  • 2 tsp vanilla extract
  • ¾ cup erythritol

Directions:

  1. Prepare a bowl, mix gelatin with cold water and stir till dissolve. Set aside for 5 minutes.
  2. Pour ½ cup of hot water in a pan, add erythritol, stevia, and stir well.
  3. Combine the mixture (2) with gelatin mixture (1), add vanilla extract, and stir well.
  4. Beat using a mixer and pour into a baking pan.
  5. Set aside in refrigerator until set, then cut into pieces, and serve.

Tiramisu Pudding

Preparation time: 2 hours and 10 minutes

Ingredients:

  • 8 ounces cream cheese
  • 16 ounces cottage cheese
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp instant coffee
  • 4 tbsp almond milk
  • ½ cup erythritol

Directions:

  1. Prepare a food processor, mix cottage cheese with cream cheese, cocoa powder, coffee, and blend well.
  2. After that add the erythritol and almond milk, blend again.
  3. Divide the mixture into dessert cups.
  4. Keep in refrigerator for few hours until you are ready to serve.

 

Milky Avocado Smoothie

Preparation time: 5 minutes

Ingredients:

  • ½ cup coconut milk
  • 1½ cup avocado, pitted and peeled
  • 2 tbsp green tea powder
  • 1 tbsp stevia
  • 2 tsp lime zest

Directions:

  1. In a smoothie maker, combine milk with avocado, green tea powder, lime zest, and pulse well.
  2. Add stevia, blend well, divide into 2 glasses, and serve.

Lemon Sorbet

Preparation time: 5 minutes

Ingredients:

  • 4 cups ice
  • Stevia, to taste
  • 1 lemon, peeled, and chopped

Directions:

  1. In a blender, mix lemon with stevia and ice, and blend until everything is combined.
  2. Divide into glasses and serve cold.

 

Raspberry Ice Pops

Raspberry Ice Pops

Preparation time: 2 hours 10 minutes

Ingredients:

  • 1½ cups raspberries
  • 2 cups water

Directions:

  1. Put raspberries and water in the pan, heat up to boil and simmer for 10 minutes over medium heat.
  2. Pour the mixture into an ice cream tray, stick ice pop sticks into each one and frozen for 4 hours.
