Cauliflower Balls with Greek Yogurt Sauce

Preparation Time:30 minutes

Ingredients

  • 1 head cauliflower
  • 1/2 cup Parmesan cheese, grated
  • 3 eggs
  • 1 cup Asiago cheese, shredded
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • Salt and black pepper, to taste

For Greek Yoghurt Sauce:

  • 1 cup Greek yogurt
  • 1 tsp lemon juice
  • 1 garlic clove, minced
  • 1 tbsp mayonnaise
  • 1 tbsp olive oil
  • 1/2 tsp dried dill weed

Directions

  1. Cut cauliflower into florets and cook in a large pot of salted water until tender, about 6 minutes.
  2. Preheat your oven to 400°F.
  3. Coat a baking pan with parchment paper.
  4. Mash the cauliflower, and mix with Parmesan, eggs, cheese, onion, garlic, salt and black pepper; shape the mixture into balls.
  5. Bake for 20 minutes or until they are slightly crisp.
  6. To make the sauce, whisk all remaining ingredients.
  7. Serve cauliflower balls with Greek yogurt sauce on the side.

Saucy Cheesy Asparagus Bites

Preparation Time:35 minutes

Ingredients

  • 1 ½ pounds asparagus, ends chopped.
  • 1 stick butter, melted
  • 1/2 tsp coarse salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp ground cumin
  • 1/4 tsp dried dill weed
  • 1/2 cup Asiago cheese, grated

Directions

  1. Preheat your oven to 400° F.
  2. Coat asparagus with melted butter, salt, pepper, cumin and dill weed.
  3. Bake for 30 minutes in the middle of the preheated oven, stirring once or twice.
  4. Top with shredded Asiago cheese and bake an additional 5 minutes or until cheese is slightly browned.

Two Cheeses and Meats Dip

Preparation Time:15 minutes

Ingredients

  • 1 tbsp olive oil
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • Salt and ground black pepper, to taste
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes, crushed
  • 8 ounces mascarpone cheese, at room temperature
  • 6 ounces Colby cheese, shredded

Directions

  1. Heat the oil in a large-sized skillet, preheated over moderate flame. Now, cook the ground meat until it is well browned, crumbling with a spatula as it cooks.
  2. Add the seasonings and mascarpone cheese. Top with shredded Colby cheese. Cover and allow cheese to melt, about 5 minutes.
  3. Serve with veggie sticks and enjoy!

Dippable Cheese Crisps

Preparation Time:20 minutes

Ingredients

  • 1 cup Romano cheese, finely shredded
  • 1 cup Pepper Jack cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 1 jalapeño, finely chopped
  • 1/4 tsp red pepper flakes
  • 1/2 tsp ground cumin
  • 1/4 tsp cardamom
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 400°F.
  2. Line a baking sheet with a sheet of parchment paper.
  3. Scoop 1 tablespoon of Romano cheese into a small mound on the parchment paper. Top with about 1 tablespoon of shredded Pepper Jack cheese.
  4. Add bacon and chopped jalapeño. Sprinkle with red pepper, cumin, cardamom, salt, and pepper; gently flatten each mound.
  5. Bake for about 12 minutes. Transfer the baking sheet to a wire rack to cool before serving. Serve with marinara sauce.

 

Keto Tortilla Chips with Guacamole

Preparation Time:20 minutes

Ingredients

For the chips:
  • 1 tbsp coconut oil
  • 3/4 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 tsp baking powder
  • 1/4 cup psyllium husk powder
  • 1/3 tsp xanthan gum
  • 1/3 tsp turmeric powder
  • 3/4 cup hot water
  • 2 tbsp avocado oil
For the Guacamole:
  • 2 ripe avocados, seeded and peeled
  • Fresh juice of 1 fresh lemon
  • Salt and pepper, to taste
  • 1/3 tsp cayenne pepper
  • 1 small-sized onion, chopped
  • 1 serrano chili pepper, stems and seeds removed, minced
  • 1 cup ripe plum tomatoes, seeded and chopped
  • 2 tbsp fresh cilantro, chopped
  • 2 garlic cloves, finely mince

Directions

  1. Get a big bowl and pour in the ingredients ( coconut oil, almond flour, coconut flour, baking powder, psyllium powder, xanthan gum, and turmeric), stir and mix them well. Pour in some water and knead into a dough.
  2. Spread some coconut flour on a working surface.
  3. Then, roll out your dough very thin, about 1.2-inch thick. Drizzle with avocado oil.
  4. Cut the dough into triangles; bake tortilla triangles in the preheated oven at 350 ° F, on a parchment-lined baking sheet for 10 minutes.
  5. Your chips will crisp up as they cool.
  6. Meanwhile, prepare your guacamole by mixing scooped avocado pulp and fresh lemon juice. Add the remaining ingredients and stir until everything is well blended.
